I use Hon tsuyu in a few videos on my youtube channel and it can be hard to find. You can make it at home if you have a few Japanese ingredients.
Add sake and mirin into a small pot and burn off the alcohol on medium heat
When the alcohol is burned off, add the soy sauce and heat until just before it starts to simmer.
When it begins to simmer, add the katsuo bushi and drop the heat to low. Simmer for 2-3 minutes
Strain and let cool. Store in the fridge in a glass jar.
