Erik Bentz is the chef behind the ramen at the Japanese inspired popup, Mochiko based in Cincinnati Ohio. Erik is the first traditionally trained chef on the show and shares a ton of knowledge ranging from how to develop flavors for your own bowls of ramen all the way to tips on how to get a popup ramen restaurant going in a non-traditional ramen town.
