This week’s episode features Motoki Matsunaga, the Chef / Owner of the Menroku Ramen group in Japan. Motoki owns and operates 5 ramen restaurants, primarily in the Kansai region (Kyoto, Osaka, Hyogo). His shops in Osaka and Kyoto specialize in duck ramen. Motoki also has an awesome Youtube channel called, Motoki Ramen Academy, where he teaches his techniques and recipes for making ramen.
This interview was done in Japanese, so I asked @backyardramen to come on the show and help me translate. She did an awesome job and translated Motoki’s answers true to his word.
